This week’s recipe comes to us from a reader who wanted to share her family’s favorite chicken noodle soup recipe, which she has titled “New York’s Best Chicken Noodle Soup.” The following is a write-in submission we had from a reader named Julia:
“Hi guys, love your website! I noticed that all of your recipes have a legal story behind them, so I thought you might be willing to share my all-time favorite chicken noodle soup. You see, I created this recipe after my husband was injured in a car accident.
We desperately needed a NYC car accident lawyer to help us, since my husband suffered a serious back injury after being struck by a drunk driver. The attorney who helped us was so compassionate and understanding. He promptly responded to our phone calls, took my family’s losses seriously, and fought so hard to bring the drunk driver to justice.
Thanks to him, we didn’t have to worry about being bogged down by hundreds of thousands of dollars in medical expenses or how we’d support ourselves while he was out of work. During this difficult time in our lives, I started to take out my frustrations with life in the kitchen. I always loved to cook, and during this time in my life, I felt the need to feel more centered and, well, normal again. Money was still tight at that point, so I started trying out easy, cost-effective recipes and that’s how my New York’s Best Chicken Noodle Soup was born.
After I perfected the recipe, I named it after our lawyer. Without him, I don’t know where our family would be. I hope other families find the same comfort in the chicken noodle soup that mine did during the most difficult time in our lives.”
½ tbsp parsley
½ tbsp thyme
Salt to taste
Pepper to taste
2 stalks of diced celery
2 chopped and peeled carrots
10 oz. egg noodles
2 large chicken breasts
10 cups of chicken broth
- Combine chicken broth, uncooked chicken breasts, carrots and celery in a pot. Bring to a boil. Once you’ve reached a rolling boil, bring the temperature down to a simmer and cook until the chicken is cooked through.
- Remove your cooked chicken from the broth and shred it with a fork and knife.
- Add your egg noodles to the broth and bring it back up to a boil. Once boiling, reduce heat and simmer until your egg noodles are cooked to your liking.
- Combine seasonings and shredded chicken to the pot of chicken broth and veggies. Then, bring to a boil one more time. Once boiling, remove from heat and let cool before serving.
